Dotty’s Easy Peasy Victoria Sponge


The best thing about job is that we get to meet so many amazing people along the way. Today we’re cooking with the lovely Lianne from Retro Dotty!  Lianne is going to share with us one of her nan’s vintage recipes, an ‘all in one Victoria Sponge’.

All in One Victoria Sponge
This is a classic recipe from my Nanny Dots vintage recipe book. Sadly my dear Nan is no longer with us but she is the namesake behind the Retro Dotty brand and baked amazing cakes like this one. This is really easy to make as you basically put all the ingredients into a bowl and mix until just combined. Traditional Victoria Sponges only have jam sandwiched in between but I like to use raspberry jam (not the traditional strawberry) and a layer of buttercream – well if you’re going to bake a cake you might as well go all out!


230g plain flour
4 tsp baking powder
230g caster sugar
230g butter (softened to room temperature)
4 medium eggs
Large pinch of salt

Preheat the oven to 180 °C (160°C fan)  and grease two 8 inch sponge tins and line the bases with baking parchment.

Place all the ingredients into a bowl and mix on low speed until they come together to form a smooth batter. Be careful you don’t over mix, just make sure the ingredients are combined.

Divide the batter between the two prepared cake tins and spread evenly.

spongeBake for 25-30 minutes in the middle of the oven (check them after 20 minutes and rotate the tins if one side is browning too much).

Let the cakes cool in the tins for 5-10 minutes then turn out and cool on a wire rack.

When completely cool, sandwich with raspberry jam and buttercream. Dust the top of the cake with caster sugar.

And there you have it a Victoria sponge Dotty would be proud off!

Finally, serve yourself a large slice with a cup of tea (from a vintage tea cup of course).
